Esta's Cranberry Salsa
A sweet and spicy holiday must have appetizer
- 12 oz uncooked, fresh cranberries
- 1/4 cup green onions
- 1-2 fresh jalapenos
- 2 TBLS cilantro
- 3/4 cup sugar
- 1 TBLS lemon juice
- 1/8 tsp salt
- 16 oz cream cheese (whipped)
Use hand food chopper to chop cranberries. (not ideal to use food processor)
Chop green onion, jalapeno peppers, and cilantro. Add to chopped cranberries.
Add sugar, lemon juice and salt and stir gently.
Cover and refrigerate overnight.
Strain extra liquid before pouring cranberry salsa over cream cheese.
Spread over Ritz crackers or Wheat Thins and enjoy!
