Peach Cobbler? Yes, Please!

My connection with peaches began as far back as I can remember. When you grow up in a state with it’s motto after a fruit, that fruit had better be good….and it is! Georgia was given the name, “The Peach State” apparently because we have perfected the peach growing process, producing the sweetest, juiciest, “taste like summer” food that other states should be envious of. (When I say, “we”, of course I mean the amazing farmers around us!)

From the time I can remember, my mom would take fresh peaches in the summer, cut them up, put them in freezer bags, and freeze them for the rest of the year. We would use them throughout the year for cobblers, homemade ice cream, and pound cake toppings. I spent many days with my childhood best friend at her family’s peach farm in south Georgia. I have memories of eating peaches right off the tree, fuzzy skin and all, right down to the big peach pit.

If you live in the south, surely you have stopped at a farmer’s market or roadside stand to purchase the fresh peaches straight from the farm. (If not, you are overdue!) If you are lucky enough, you will pass a family peach orchard that has a sign out front that says, “You Pick”. This means that you bring your own bag, basket, or bucket and pick fresh peaches right off the tree. Most of time time leaving your payment in a coffee can they have left out on the porch for the honor system. My daughter and I love stopping by one particular family’s orchard for white peaches in the summer. A treat we look forward to all year.

I am a peach lover in many forms. I can eat my weight in them just peeled and cut up in a bowl. There are several other forms I love and I’ll share with you as well. Summer isn’t over yet- you still have time to try some!

First of all, of course, is peach cobbler. A staple in the south that is best served warm with vanilla ice cream or whipped cream. I’ll share a super easy and fast way to prepare it. Taught to me by a sweet lady in our church when I was in college.

Peach Cobbler

Easy peach cobbler to feed a crowd
Prep Time 10 minutes
Cook Time 40 minutes
Servings 8

Ingredients
  

  • 4 Fresh Peaches
  • 2 16 oz OR can peaches
  • 1 stick butter
  • 1 cup self rising flour
  • 1 cup sugar
  • 1 cup milk
  • 1 tsp cinnamon

Instructions
 

  • Preheat oven to 350 degrees.
  • Melt a stick of butter in a 9×13 baking dish in the oven. (or use large cast iron skillet)
  • Mix together 1 cup flour, 1 cup sugar, and 1 cup milk.
  • Pour mixture over the melted butter.
  • Peel and cup up 4-6 peaches OR 2 cans of peaches and pour over the mixture. Do not drain.
  • Sprinkle with cinnamon.
  • Bake 30-40 minutes until crust is golden brown.

Notes

If your peaches aren’t very juicy, peel and cut them and sprinkle with sugar.  Put them in the fridge for a few hours for them to get nice and juicy! 
 

Many nights in the summer I don’t want to spend an hour on a cobbler and I may be the only one craving peach cobbler, so get ready for this… I make peach cobbler for ONE….in a MUGin the MICROWAVE! YES!! I literally have peaches in a fruit bowl right this second calling my name! All by myself I can have warm, fresh peach cobbler. You’re welcome.

Peach Cobbler in a Mug

Individual Peach Cobbler
Prep Time 5 minutes
Cook Time 2 minutes
Servings 1

Equipment

  • microwave
  • measuring spoons
  • microwave safe mug

Ingredients
  

  • 1 peach
  • 1 tbsp butter
  • 2 tbsp brown sugar
  • 2 tbsp milk
  • 2 tbsp all purpose flour
  • 1/8 tsp baking powder
  • sprinkle cinnamon

Instructions
 

  • Melt butter in a mug in the microwave for 30 seconds.
  • Add brown sugar, flour, milk, and baking powder to mug and stir to combine.
  • Cut up a peach on top.
  • Sprinkle with cinnamon.
  • Microwave for 2 minutes.
  • Be careful! It will be hot!

This is yum with a scoop of vanilla ice cream or cool whip!  Yes!!
