Let’s Just Say It’s Homemade

The weekend is coming! No matter when you are reading this post- hold on, the weekend IS coming! Growing up, that meant looking forward to a big Saturday breakfast.

In my mind I would like to think I make homemade biscuits from scratch, but in reality that’s just not true. In the process I do actually get a little flour on my shirt and my hands are sticky with dough, so let’s just say it’s homemade! 😉 In the Skipper world of kids, activity, ministry, work, and all of the things, this is about as homemade as I get!

My love of biscuits like I’m about to show you came from my Grandpa Briggs. He was famous in his little town for making biscuits and gravy on Friday mornings. He would take them to his print shop in McAlester, Oklahoma or an office full of people or make them for us if we were visiting. It was a treat and a privilege if you were the recipient of this breakfast at the end of a work week. My favorite was to visit him in the summer and eat his biscuits and gravy on his back patio on the picnic table. The food was great, but he would get so excited about making them and serving them to people that you couldn’t help but be excited about it as well!

There are a few things that made his biscuits special. They were cooked in a cast iron skillet, they were cut into small biscuits all connected with pieces of biscuit still in between, and you always put your biscuit crust side up on the plate so that they don’t get too soggy when you put gravy over them.

I know I referenced Saturday biscuits and mentioned that my grandpa made them on Friday. At my house growing up, Saturday was the day for big breakfast. It was the only day we weren’t rushing out the door to school and work and sat down for bacon, eggs, biscuits, gravy, grits, etc. It was a slower pace and I guess the bribe we needed to get up before we started our list of chores for the weekend!

Only a few years ago I decided to attempt the biscuits like my granddad and realized that it is actually super easy and they are delicious. A few more steps from the frozen biscuits, which is why to me, they are basically homemade! I thought today I would share them with you and encourage you to enjoy the long weekend and maybe even connect over a “big” breakfast with family or friends. (and perhaps my workout girls won’t shame me! ha!)

Start with Pioneer baking mix and a cast iron skillet.

Preheat oven to 450 degrees and melt a couple of tablespoons of butter in the skillet while you are mixing up the dough.

Follow the directions on the back of the box for making biscuits. Knead a few times on a floured surface and then put the whole dough ball into the skillet. Be careful….it’s hot from the oven!

Use your fingers to spread out the dough to fill up the skillet.

Take a small biscuit cutter or cookie cutter (mine is 2 inches) and punch holes in the dough, keeping the circles close together. I dip the cutter in flour so that it doesn’t stick to the dough.

Fill up the skillet with circles, then put into the oven for about 10-12 minutes. You will know when they are beautiful and brown on top!

Brush them with butter when they come out.

My favorite parts are the little pieces between the biscuits. They are crunchy and so delicious! We love our biscuits with sausage gravy, local honey (thank you Bearded Bee!), or jelly.

My granddad made his sausage gravy, but again, I take some shortcuts! I brown breakfast sausage, make the Pioneer gravy from the packet according to the directions and then add some of the sausage. So good!

    Ok! You’ve inspired me! Maybe I’ll dust off the old iron skillet one morning this weekend! These reminded me of my sweet Grammy, who I’m sure is making her iron skillet biscuits in heaven! I have distinct memories of her putting the dough in the skillet, and then pressing the front of her index and middle fingers in to make an impression in the dough. Ah to have one more of her biscuits!
